Squeeze out the excess water, marinate with all the seasonings along with minced ginger added until flavour is absorbed. Remove and coat each slice with a layer of batter. Deep-fry in smoking oil until golden on surface. Remove and drain well, then transfer to the center of the tomato sliced. Serve with pepper salt or ketchup as a dip.
